Baked Potato Soup=Yummy!!!

I had a friend share her Potato Soup recipe with me recently and planned on making it last weekend...but wouldn't you know that I'd end up leaving it on my desk at work!!! So I searched through by cook books and found this one. I made this last Saturday and Rocky liked it so much he ate 3 bowls!!!! (If I did that btw I'd gain 10 lbs) So here it is in all of it's wonderful tastyness:

Baked Potato Soup

12 slices of bacon

2/3 cup of margarine

2/3 cup of flour

7 Cups milk

6 large baked potatoes, peeled and cubed

green onions, chopped

1 1/4 shredded cheddar cheese

1 Cup sour cream

salt and pepper to taste

Cook bacon, drain and crumble and set aside. In a stockpot melt margarine over medium heat. Whisk in flour until smooth. Gradually stir in milk, whisking constantly until thickened. Stir in potatoes and onions. Bring to a boil, stirring frequently. Reduce heat and simmer 10 minutes. Mix in bacon, cheese, sour cream, salt and pepper. Continue cooking, stirring frequently, until cheese is melted.

Here's some awesome recipes you'll love...

The end of summer last year Dalton's preschool asked each parent to submit two recipes that the teaches would use for something at a later...well I was pleasantly surprised when each parent got a cookbook for Christmas with not only our recipes but also our childrens' recipes. Some of them are just too funny I thought I'd share a few.

First up Mr. Dalton:

My favorite meal that mommy makes is corn "With Pizza, plant it and pick it, Microwave for two minutes and then eat it"

C-My favorite meal that mommy makes is "Chicken Nuggets, you get some chicken and some sauce, put it on the stove for 90 minutes then cook it in the microwave for 90 minutes. Then put cinnamon on it to make it yummy with apples and bananas and strawberries. Put that in a bowl and stir it"

W-My favorite meal that mommy makes is "salsbury steak, Put it in the microwave at 100 degrees, cook, then let it cool down before you eat it. Not sure of the ingredients because it just comes in the package that way!"

G-My favorite meal that mommy makes is "Macaroni, get some cheese, with some meat on it and broccoli and corn on the stove for 10 seconds. Be careful it's hot and will make your mouth burnt"

Here's my lil Chef in all his cuteness helping me make brownie's last weekend.

Miss Tiffany The not so much home-maker

Tonight as I was cooking a whole bone in ham for the first time I was thinking back to 8 years ago when Rocky and I moved in together and I didn't know how to cook a thing. Even now I'm not the best cook but I am way more experimental. I can come up with some time of dish most of the time when I have forgotten to prepare a menu. Sometime's it's just a "Tiffany Surprise" as I like to tell Rocky when he asks me whats for dinner and I have no clue as to how it really will turn out.

Since the beginning of the year I have finally branched out to try and cook those holiday meats. I cooked my first turkey on New Year's Day and my first ham tonight. For some reason I had in my mind that both of these pieces of meat would be hard to prepare. But I now realize that they're not hard but just time consuming!

Where am I going with all of this you ask...well I just wanted to share this recipe that we love. Now this is the most unhealthy recipe I could give you but it's oh so good.

Enchilada Casserole

2lbs of hamburger or ground turkey
1 Onion diced
1 Green Pepper Diced
1 bag of Doritos
1 lb of Velveeta Cheese cubed
1 can cream of mushroom (I use celery too just depends on what I have on hand)
1 can tomato soup
1 can of Rotel
1 pkg of taco seasoning

Heat Oven to 350. Brown hamburger and cook in the onion and green pepper...at the same time combine soups and warm on the stove. Take Doritos and crush them up and line them on the bottom of a 9 x 13 glass dish or cake pan. Drain hamburger mix and put on top of the Doritos...sprinkle half of the taco seasoning on top...then add the cubed Velveeta...pour the soups on top of that and then add another layer of crushed Dorito's.

Put in a the over and heat until cheese is melted and tops of the Doritos are browned.

Again...nothing healthy about this one but very tasty and always tastes better as left overs.

Enjoy!

How many Calories!!!!

It's no secret that I want to lose some lb's...I'm thinking 15 to 20 to 30. I'm starting with 5! Anyway it is the holiday season for petes sake so therefor yummy holiday food is all around us. This Saturday as a matter of fact my friend Shannon and I are having a candy making day with our kiddos. ...Ok so I want to make those yummy Oreo Balls! Man they are so good. So I go online to get the recipe to start my grocery list and low and behold they have the recipe and nutritional value (or not so nutritional value). Can you believe these babies have 163 Calories per 1 ball!!!!! Yikes!!!! Here's the recipe in case you would like to spend all of your lunch calories on one piece of chocolate....

40 truffles (approximately)

Ingredients

* 1 lb Oreo cookies (3 sleeves)
* 8 ounces cream cheese, room temperature
* 1/2 teaspoon vanilla extract (using different extracts allows for subtle flavour changes...I've used mint extract, upped to 1 tsp) (optional)
* 1 lb milk chocolate
* 1/2 lb white chocolate

Directions

Using a food processor, grind cookies to a fine powder.

With a mixer, blend cookie powder, cream cheese and vanilla extract until thoroughly mixed (there should be no white traces of cream cheese).

Roll into small balls and place on wax-lined cookie sheet.

Refrigerate for 45 minutes.

Line two cookie sheets with wax paper.

In double-boiler, melt milk chocolate.

Dip balls and coat thoroughly.

With slotted spoon, lift balls out of chocolate and let excess chocolate drip off.

Place on wax-paper-lined cookie sheet.

In separate double boiler, melt white chocolate.

Using a fork, drizzle white chocolate over balls.

Let cool.

Store in airtight container, in refrigerator
