Tonight as I was cooking a whole bone in ham for the first time I was thinking back to 8 years ago when Rocky and I moved in together and I didn't know how to cook a thing. Even now I'm not the best cook but I am way more experimental. I can come up with some time of dish most of the time when I have forgotten to prepare a menu. Sometime's it's just a "Tiffany Surprise" as I like to tell Rocky when he asks me whats for dinner and I have no clue as to how it really will turn out.
Since the beginning of the year I have finally branched out to try and cook those holiday meats. I cooked my first turkey on New Year's Day and my first ham tonight. For some reason I had in my mind that both of these pieces of meat would be hard to prepare. But I now realize that they're not hard but just time consuming!
Where am I going with all of this you ask...well I just wanted to share this recipe that we love. Now this is the most unhealthy recipe I could give you but it's oh so good.
2lbs of hamburger or ground turkey
1 Onion diced
1 Green Pepper Diced
1 bag of Doritos
1 lb of Velveeta Cheese cubed
1 can cream of mushroom (I use celery too just depends on what I have on hand)
1 can tomato soup
1 can of Rotel
1 pkg of taco seasoning
Heat Oven to 350. Brown hamburger and cook in the onion and green pepper...at the same time combine soups and warm on the stove. Take Doritos and crush them up and line them on the bottom of a 9 x 13 glass dish or cake pan. Drain hamburger mix and put on top of the Doritos...sprinkle half of the taco seasoning on top...then add the cubed Velveeta...pour the soups on top of that and then add another layer of crushed Dorito's.
Put in a the over and heat until cheese is melted and tops of the Doritos are browned.
Again...nothing healthy about this one but very tasty and always tastes better as left overs.
